Ingredients
For the almond streusel topping
1 1/2cupsalmond flour
1/2cupbrown sugar
1tspground cinnamon
1/2tspsalt
1/4cupbutterunsalted, about 1/2 a stick
For the apples
5applespeeled and sliced; I used Honeycrisp, but use your favorite baking apple
1/4cupsugar
1tspground cinnamon
1/2orangejuiced
1splashbrandyoptional
Instructions
Preheat oven to 325°F. While the oven is heating, mix almond flour, cinnamon and salt together. Cut in the butter with a pastry blender (or 2 knives, or with clean hands) so that the topping resembles course crumbs. Set aside.
Combine apples, sugar, cinnamon, orange juice, and optional brandy in a bowl. Mix well. Pack into a deep oven-proof baking/serving pie dish.
Spoon struesel topping over the apples. Bake in preheated oven for 55-65 minutes or until apples are soft and bubbling and the topping is crisp. Serve with homemade whipped cream or ice cream, if desired.
Notes
Keep an eye on it while baking since the almond flour streusel can brown (and burn) quickly. If the topping begins to get too dark, tent with foil for the last 10-15 minutes or so.
