Ingredients

  • 1 cup chickpeas canned, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber
  • 1/2 cup feta cheese crumbled
  • 1/4 cup red onion rough chopped
  • 1/4 cup parsley
  • 2 tbsp olive oil extra virgin
  • 1 lemon juiced
  • salt and pepper to taste

Instructions

  • Drain and rinse the chickpeas, halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and chop the fresh parsley.
  • In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley. Toss gently to combine.
  • In a small bowl, whisk together the extra-virgin olive oil, lemon juice, salt, and pepper to create the dressing.
  • Pour the dressing over the chickpea salad mixture and toss gently to coat the salad evenly.
  • Add the crumbled feta cheese to the salad and give it one final, gentle toss.
  • Serve the salad immediately or let it sit in the refrigerator for 30 minutes to allow the flavors to meld together.
